Beef roll ups with sausage and onion stuffing & thyme gravy

Thyme Gravy

Ingredients

  • 1 onion, finely chopped
  • 25g butter
  • 15g plain flour
  • 350ml beef stock
  • 1 tablespoon fresh thyme leaves

Method

Fry the onion in the butter until golden and mix in the flour. Add the stock and bring to a simmer. Whisk and add the thyme. Simmer for 10 minutes then blend and pass through a sieve.

Beef Roll Ups

Ingredients

  • 8 thin slices Moilie topside
  • 200g Moilie beef sausage meat
  • 50g breadcrumbs
  • 2 onions, finely chopped
  • 25g butter
  • Pinch nutmeg
  • Handful chopped parsley
  • Oil for cooking

Method

Fry the onions in the butter until golden. Place in a bowl with the breadcrumbs and season with pepper and the nutmeg. Cool and add the parsley and sausage meat.

Take a slice of topside and place an eighth of the mixture on top. Spread evenly over the beef. Roll up and repeat.

Heat a couple of tablespoons of oil in a large frying pan. Add the olives, sealed part down into the pan. Seal all over and then add the thyme gravy. Cover with a lid and simmer for about 30 minutes.
